Did someone say dessert!?

So tonight after dinner I am realizing we don’t have dessert!! Now for those of you who know me, know that this is a rarity in my house. So I quickly jumped up and raced to the kitchen quickly remembering that I have some blueberries and peaches I should probably use! Now coming up with what I am going to make. I love cooking in a cast iron skillet especially with fruit. That’s kind of my go to cooking tool. Wait, is that right do you call it a tool? Anyways that’s what I grabbed. 🙂 I went ahead and threw the peaches and blueberries in there to see if that would help me come up with something.

Man doesn’t that look good already!? I love fruit, it just makes things better. Now what to add… I got it! You can never go wrong with bourbon and peaches right! Peach and Blueberry Bourbon crisp will do the trick! Yum my mouth is already watering.

Now especially on a week night I like to make things easy. I do not want to spend a ton of time making something after working all day. This dessert definitely fits that mind set. A few things to add and….

Tada! 🙂 okay so it took 15 min but really that’s not bad for something so delicious! Now off to the oven. This is the part I hate. Waiting… I am not a very patient person when it comes to food. lol Especially for dessert! ….. waiting…. and waiting….

….. Still waiting.

When did 40 min take so long! We haven’t even got to the cooling part yet!…

My Peach and Blueberry Bourbon Crisp recipe!

Filling

  • 4 medium peaches sliced
  • 1 cup of blueberries
  • 1/4 cup of flour
  • 1/4 cup of granulated sugar
  • a pinch of salt
  • 2 tablespoons of bourbon (now I may be a little heavy handed when I make it)

Crisp

  • 1/2 cup softened butter
  • 1/2 cup of brown sugar
  • 1/4 cup of flour
  • 1/4 tsp of cinnamon
  • 3/4 cup of old fashioned oats

Directions

Mix all of the filling ingredients in a bowl and pour into cast iron skillet. In a separate bowl mix together all of the crisp ingredients. Pour crisp mixture evenly over the top of your fruit mixture. Place in the oven on 350 degrees F for 40 min.
